The guinea fowl originates in Africa where it is often seen running round
homesteads, where it is used as a watchdog. Current UK consumption is limited to
the gourmet market.
It is estimated at 500 - 700 tonnes per year. (About 8,000 birds per year in
Edinburgh.) There is only one large supplier in the UK which is based in
Norfolk. 40% of requirements are imported from France, Italy and Belgium.
