About the Course
This course will help you to develop the relevant skills in the areas of the cooking process, food preparation, food hygiene and food service. It is also designed to develop excellent culinary skills and students participate in a range of internal and external catering events to allow them to perform in a real working environment.
Work experience is an integral part of the course, with graduates from this course invariably going on to find employment, several working in Michelin standard restaurants.
You will study a range of topics including Food Classification and Purchase, Hospitality Supervision, Hospitality Financial and Control Systems, Production Cookery, Cold Kitchen, Hot Kitchen, Sweets and Desserts.
Scottish Highers/A-Levels: CC/DE. Preferably you will hold a City and Guilds 7100/01 and 7100/02.
